PAN FRIED PORK LOIN WITH GOAT’S CHEESE AND PEAR
Pan Fried Pork Loin With Goat’s Cheese & Pear Cooking Time: 30mins

INGREDIENTS
1 Pork loin
1 Pear
125g Goats cheese log
1 tsp paprika
½ tsp cinnamon
Glug of water
Glug of pear liquor or similar
Glug of EVOO
1 tsp brown unrefined sugar
1 slice of lime or lemon
Honey for drizzling
Bunch of flat leaved parsley
METHOD
- Clean and cut all fat and sinew from the loin and then cut into 8 equal slices. Place in a bowl and mix with the EVOO, seasoning and ½ tsp of paprika.
- Peel, slice and cut the pear into small little dice. Place in a small pan and add liquor, water, cinnamon, lime and sugar and bring to a simmer then switch off and leave.
- Slice the goats cheese into 8 equal slices. (TIP: Wash & place sharp knife under hot water each time you slice)
- Turn oven on to 200.
- Put non-stick frying pan on stove. When hot, place all 8 slices of pork, sliced side down and seal each cut side first then, using tongs, seal all the sides. When done, remove pan from heat. Take out and place on oven tray. Place a slice of goats cheese on top of each pork slice. Pop in hot oven for 5 minutes.
