Broccoli With Toasted Marcona Almonds Paired Recipe

Ingredients:

  • 450g fresh broccoli, cut into florets
  • 125g Marcona almonds
  • 30ml olive oil
  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • Salt and freshly ground black pepper to taste
  • Freshly grated Parmesan cheese (optional, for serving)

Instructions:

  1. Blanch the Broccoli: Bring a large pot of salted water to a boil. Add the broccoli florets and blanch them for about 3 minutes until they turn bright green but remain crisp. Quickly drain the broccoli and transfer it to a bowl of ice water to stop the cooking process. Drain again and set aside.
  2. Toast the Marcona Almonds: In a dry skillet over medium heat, toast the Marcona almonds for 2-3 minutes until they become fragrant and lightly browned. Keep an eye on them as they can burn quickly. Remove them from the skillet and set them aside.
  3. Sauté the Garlic: In the same skillet, add the olive oil and minced garlic. Sauté for about 1 minute until the garlic becomes fragrant.
  4. Add Broccoli and Almonds: Add the blanched broccoli florets and toasted Marcona almonds to the skillet. Toss to coat them evenly with the garlic-infused olive oil.
  5. Zest and Season: Grate the lemon zest over the broccoli and almonds. Season with salt and freshly ground black pepper to taste. Toss again to combine all the flavours.
  6. Serve: Transfer the broccoli and almonds to a serving dish. If desired, sprinkle with freshly grated Parmesan cheese for an extra layer of flavour.
