Alioli, which can often be referred to as aioli, is a sauce which is predominantly made up of natural garlic, pasteurised egg yolk and extra virgin olive oil. Our alioli here at Victus Emporium uses only the freshest garlic, in fact, the garlic cloves are only picked one day before production of the sauce begins. This process reduces the amount of oxidation that can occur, thus keeping it well preserved with a fresh garlic flavour.
As referred to in the title of this blog post, alioli is extremely versatile. It is often used in a range of Mediterranean dishes as well as a stand alone sauce. It particularly compliments potatoes, vegetables and seafood. This sauce can also be varied in a multitude of ways depending on what recipe it is being used in.
