WHAT IS ALIOLI?

THE NAME ALIOLI IS DERIVED FROM THE CASTELLANO SPANISH SPELLING OF THE TWO PRINCIPAL INGREDIENTS; GARLIC AND OLIVE OIL.

ALIOLI WAS TRADITIONALLY MADE BY CRUSHING GARLIC AND MIXING IT TOGETHER WITH OLIVE OIL AND A PINCH OF SALT. TO CREATE A TASTY CREAMY ACCOMPANIMENT TO GRILLED FISH OR ROAST CHICKEN.

Its origins are traced back to east / north east of Spain, south of France, southern regions of Italy (Calabria & Sicilia) and parts of the middle East.

To emulsify and stabilise the product, the addition of egg and lemon juice is added, which is why some liken Alioli to a garlic mayonnaise. This can be true for consistency but certainly not taste. A good alioli is unmistakable and would never be confused with mayonnaise.

Ubiquitous is most tapas bars in Spain, it is often offered and served with a basket of crusty white bread, when you order a cool beer or wine or before your meal arrives.
